Crock Pot Beer BBQ Chicken

During our crock-week, I discovered this recipe for  Crock Pot BBQ Beer Chicken at How Sweet Eats,

Awkward Kitchenette: Crock Pot Beer BBQ Chicken
I knew that was the perfect solution for dinner (and lunches) and would even be perfect leftovers for later in the week (BBQ Chicken Nachos - just you wait!), since it makes so much.  So I cooked it right up.

However, knowing me, you know that I didn't have the right ingredients, and I wound up making my own barbeque sauce instead of bottled.  It worked out quite well though, as we are very picky about barbeque sauce 'round here, and we quite liked this.

I modeled my sauce after this recipe for  St. Louis BBQ Sauce.

You'll never guess how I found it...

Crock Pot Beer BBQ Chicken

3 pounds boneless, skinless chicken breasts (about 6 large)
2 tablespoons onion powder
1 tablespoon paprika
1 tablespoon + 1 teaspoon garlic powder
1/2 teaspoon red pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons brown sugar
1 tablespoon brown mustard
1 1/2 cups ketchup1 tablespoon apple cider vinegar
1 bottle of beer (I went with budweiser)

Step #1: Put chicken in the bottom of your crock pot.  Then, starting with the powdery ingredients, sprinkle them over your chicken. (onion powder, paprika, garlic powder, red pepper, salt, black pepper.)

Step #2: Add brown sugar and brown mustard, then ketchup.

Step #3: Last, dump apple cider vinegar and beer over the chicken and stir to blend the sauce.

Step #4: Flip chicken breasts top to bottom.

Step #5: Cook on low for 8 hours, stirring occasionally.

Step #6: Shred chicken in sauce.

Step #7: Serve with added sauce from crock pot.
