| Awkward Kitchenette: Crock Pot Beer BBQ Chicken |
However, knowing me, you know that I didn't have the right ingredients, and I wound up making my own barbeque sauce instead of bottled. It worked out quite well though, as we are very picky about barbeque sauce 'round here, and we quite liked this.
I modeled my sauce after this recipe for St. Louis BBQ Sauce.
You'll never guess how I found it...
Ingredients:
3 pounds boneless, skinless chicken breasts (about 6 large)
2 tablespoons onion powder
1 tablespoon paprika
1 tablespoon + 1 teaspoon garlic powder
1/2 teaspoon red pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons brown sugar
1 1/2 cups ketchup1 tablespoon apple cider vinegar
Step #1: Put chicken in the bottom of your crock pot. Then, starting with the powdery ingredients, sprinkle them over your chicken. (onion powder, paprika, garlic powder, red pepper, salt, black pepper.)
Step #3: Last, dump apple cider vinegar and beer over the chicken and stir to blend the sauce.
Step #4: Flip chicken breasts top to bottom.
Step #5: Cook on low for 8 hours, stirring occasionally.
Step #6: Shred chicken in sauce.
Step #7: Serve with added sauce from crock pot.
