Some things just scream back-to-school.
The rise in humidity that you just didn't think possible and makes you want to punch summer in the stomach and move to Alaska.
The butterflies in your belly that show up with the backpacks in the grocery store, and slowly turn into giant boulders of dread by mid-August.
So, in honor of all the backpacks at my grocery store this week, allow me to share one of the best parts of back-to-school.
Caramel Apples.

I wanted chunks of apple, kind of like the apple pancakes my dad used to make, and found this recipe: Cooks.com Apple Oatmeal Cookies
So these are quite the everything cookie. I think I can do better as far as making them more specifically caramel apple and less everything, but these were good in a breakfast-of-champions kind of way.
Caramel Apple Everything Cookies
| Start by dicing the apple. It takes a long time. Be prepared. |
Ingredients
1/2 cup butter
1/2 cup honey
1 egg
1 teaspoon vanilla
3/4 cup of flour
1/2 teaspoon baking soda
1 medium cooking apple, diced
1 cup oatmeal
1 cup caramel bits
1/2 cup chopped walnuts
Step #1: Mix butter, honey, eggs and vanilla until blended.
Step #2: Add flour and baking soda and continue mixing.
Step #4: Stir in apple.
Step #5: Stir in oatmeal.
Step #6: Stir in caramel bits.
Step #7: Stir in walnuts.
Step #8: I made these into giant cookies. About two big spoonfuls per cookie and I fit 6 on a greased cookie sheet.

Step #9: Bake at 375 degrees for 12-13 minutes until edges are golden brown.

ReplyDeleteOh those backpacks. It really is just a tad too early! While we're also dying in heat in the north (Toronto), I sure can wait for fall. Cookies look great! I like the idea of the caramel bits.
