As my bitty baby girl, mini-muffin#3 turns 6 months old next week, I decided it was time I finally lost the baby weight.
I'm so glad I have her to blame this on, along with two other mini-muffins.
So, in spite of the fact that I probably had baby weight to lose long before these babies were a twinkle in their daddy's eye, I'm going off the deep end and into the Weight Watchers pool.
However, while watching weight (hopefully watching it disappear!), I haven't lost sight of my loves: muffins.
These babies (ahem, muffins) even dive for your sweet tooth with a bit of lemon frosting.
This is my take on a Weight Watcher's recipe. I'm calling them Skinny Banana Muffins, because the name Lemon Frosted Diet Dr. Pepper Banana Muffins is a little much, even for me.
Skinny Banana Muffins
1/2 cup sugar
4 tablespoons butter, softened
1/2 teaspoon vanilla
3 large bananas
1 teaspoon baking soda
1 teaspoon baking powder
2 cups whole wheat flour
1/3 cup of Diet Dr. Pepper
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup powdered sugar
2 tablespoons butter, softened
5 teaspoons lemon juice (fresh)
2 teaspoons vanilla
Step #1: Mix sugar, butter, vanilla, and bananas in the mixer. I just throw the whole very ripe bananas in. Nice and lumpy, yum.
Step #2: Add baking soda, baking powder, salt, cinnamon and flour and mix again.
Step #3: Add Diet Dr. Pepper and mix.
Step #4: Spray your muffin tin with cooking spray and fill each cup with batter.
Step #5: Bake at 350 degrees for 25 minutes or until a toothpick comes out clean.
Step #6: While they're baking, (wash your mixing bowl) and mix together all the ingredients for the frosting - powdered sugar, butter, lemon juice and vanilla.
Step #7: Let the muffins cool and then ice them! Yum! 6 Points+ each (including frosting!)
