Low Fat Applesauce Banana Bread

We have been very busy around here what with mini-muffin#1 starting preschool!

What a day it was.

We ate some first-day-donuts, hiked over in the stroller, and were approximately 32 minutes early for her first day.
I suppose everyone was a little anxious.

We climbed the stairs while she pointed out several other 'friends' she was soon to meet.

We went in when they finally opened the classroom door at 9:00 am, looked around, washed hands, and she promptly got out some of the many awesome toys and told me to head out.

Mini-muffin#2 and I cried all the way home.

Three hours later, she was back in our stroller, tales of new best friends, twirling at the park, and a backpack full to the brim of paintings.

I may have cried a little at that point too.

Today is her second day of preschool.  I have no doubts it will go almost exactly the same way as the first day - hopefully we will arrive closer to start time this time, but probably just as many tears.

Grown-up tears.

Maybe someday I will celebrate the first day back to school after a long summer of rousing grouchy teenagers.

In the mean time, here is some Low Fat Applesauce Banana Bread to lift your spirits.

Low Fat Applesauce Banana Bread


4 RIPE banananas
1 1/2 cups flour
1 cup sugar
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
2 tablespoons applesauce

Step #1: Throw those RIPE peeled bananas in your mixer.  This was much easier than mashing (and clean up was easier too!)

Step #2: Add flour to bananas, followed by sugar, vanilla, baking soda, baking powder and blend.

Step #3: Add egg and applesauce and mix.

Step #4: Pour batter in to two greased loaf pans.

Step #5: Bake at 350 degrees for 55 minutes.
