Chocolate Chip Ranger Cookies

An old cowboy leans over a small fire on the dusty bare ground.  He's holding a big cast iron skillet.  The smell of smoke and coconut wafts across the open plains.

In the morning he packs up his goodies tightly in a nap sack and they bound off into the sunrise, cowboy, stallion, and cookies.

Alright.

I seriously doubt cowboys made cookies.

Probably not in the kitchen, and definitely not over a fire.

(Pausing to google 'baking cookies over a fire'...)
But the name Ranger Cookies always makes me think of cowboys.
So make some Chocolate Chip Ranger Cookies for your cowboy.

 Chocolate Chip Ranger Cookies

Ingredients:

1/2 cup butter
1/4 cup sugar
1/2 cup packed brown sugar
1/2 teaspoon vanilla
1 egg
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1 cup flour
1/2 cup shredded sweetened coconut
3/4 cup crushed chex
1/2 cup oatmeal
1/2 cup chocolate chips

Step #1: Preheat oven to 350 degrees.

Step #2: Cream butter and both sugars.

Step #3: Add vanilla and egg and blend.

Step #4: add baking soda and salt and mix.

Step #5: Slowly add flour and mix until blended.

Step #6: Stir in chex, oatmeal, coconut and chocolate chips.

Step #7: Drop in balls on a cookie sheet, 3x4.  (I always think the size of a cookie dough ball measured in inches is unhelpful. I made these using a regular cereal spoon, on the small side I thought.)

Step #8: Bake on a greased cookie sheet at 350 degrees for 12-14 minutes until golden brown on the edges. Try not to over bake!

Step #9: Cool on cookie sheet for a few minutes and move to a rack to finish cooling.
