Actually, they do frequently ask for raw carrots with dip and enjoy bites of my salad.
But really, the 3-5 servings of veggies are sadly lacking.
Unless I count french fries, crackers and fruit snacks.
So, here is another veggie recipe to add to your arsenal of child-friendly veggies.
(Um, not that they ate these.)
Yet another of the easiest recipes ever.
This was a perfect addition to Uncle Baby's porkchops, and my dad, a vegetarian, loved them.
(Note, again, that I didn't say the mini-muffins loved them...)
I used this recipe from Smitten Kitchen to make my own version.
Broccoli Fritters
Ingredients
2 bags steamable broccoli (this is fastest)
6 eggs
1/4 cup Parmesan cheese
1/3 cup flour
1.5 tablespoons garlic powder
Step #1: Steam that broccoli! (Use the instructions on the bag, please.)
Step #2: Beat eggs and add Parmesan, flour and garlic powder.
Step #4: Add broccoli to egg mixture.
Step #5: Heat oil in a frying pan and fry batter like pancakes.
Step #6: We dipped these in sour cream and/or BBQ sauce. Delicious.




such a great idea! and i have broccoli in the fridge right now, i will have to try these later for my little guy!
