So when I saw this recipe, ButterYum's Scratch Gooey Butter Cake, a scratch version of Paula Deen's gooey butter cake, I had to try my own version.
They aren't kidding around with this name. It's gooey. Ooey gooey. The middle is gooey, the crust is even a little gooey.
Which is delicious, of course, but surprised me.
Um, I don't know why though, seeing as it says Gooey right there in the name.
It's also VERY rich. Next time I will definitely be making half this amount, unless it's for a big party - a small piece is plenty!
Scratch Gooey Butter Cake
Crust:
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup butter, melted
2 tablespoons milk
Top:
1 pkg (8 oz) cream cheese
2 eggs
1 teaspoon vanilla
1 pkg (16 oz) powdered sugar
Crust:
Step #1: Preheat oven to 350 degrees and grease a 9x13 cake pan.
Step #2: Melt 1 stick of butter in the microwave.
Step #3: Mix flour, sugar, baking powder, and salt.
Step #4: One by one add egg, butter and milk, mixing constantly until it forms a dough.
Step #5: Press dough evenly on the bottom of cake pan.
Top:
Step #6: Beat cream cheese in the mixer until smooth.
Step #8: Slowly add powdered sugar and continue mixing until combined.
Step #9: Pour powdered sugar mix over crust in the pan and smooth evenly.
Step #10: Bake at 350 degrees for 40 minutes - careful not to over bake (you'll lose the goo!)
Step #11: Cool and serve!
