Taco Layer Dip and Homemade Tortilla Chips

I have to apologize off the bat for these photos.  They are incredibly awful.  I know, I know, NO EXCUSES! But really, when all three mini-muffins are cryingly hungry and the stud-muffin is whiningly grouchy... you just get the stuff on the table.

And the mini-muffins usually cry instead of eat.

So there I was, in the midst of preparing a delicious home-cooked meal (that is, once again, taking three times as long as it should) when I had to decide between beautiful photos and peace and quiet.

It is extremely obvious what I chose.

But I couldn't stand to keep this recipe to myself, especially my homemade tortilla chips, because they were both super awesome and super impressive.  Yay, me!

I started this recipe as a Tex Mex Layered Salad from Recipe Girl.  (If you want yours to be pretty, follow her awesome instructions!)

Ours is a little different and got eaten as more of a dip, since these muffins like to dip things.  And, as a dip, it required some homemade tortilla chips to go with it!

Taco Layer Dip



1 can green chiles
1 1/2 cups sour cream
1 teaspoon cumin
1 teaspoon garlic salt
1 teaspoon chili powder

5 cups chopped lettuce
1 15-ounce can black beans
1 15-ounce can corn
1 cup shredded cheddar cheese
One 6-ounce can olives
3 cups shredded cooked chicken
2 sliced green peppers
1 pkg Taco seasoning

Step 1: Pour taco seasoning over chicken and sliced green peppers and follow directions on the package.

Step 2: Layer about half of the lettuce in the bottom of a large bowl (maybe bowl is not the right word, since it implies a narrow bottom, maybe... round glass pan? Not pan, though.  Just use the picture and find a thing that looks like that.)

Step 3: Next layer is beans and corn.

Step 4: Next layer is chicken and peppers.

Step 5: Another layer of lettuce. Then cheese and olives.

Step 6: Make the topping by mixing all the top section of ingredients until well mixed.

Step 7: Pour topping over dip and serve with:

Homemade Tortilla Chips

1 pkg flour tortillas (8)
Olive Oil
Coarse Salt

Step 1: Pre-heat oven to 275 degrees.

Step 2: Cut up the tortillas into strips/triangles/whatever.  Chip-shaped pieces.

Step 3: Place in single layer over two cookie sheets.

Step 4: Spritz with olive oil on each side of chip and sprinkle with salt.

Step 5: Bake for 12 - 15 minutes or until crisp.

  3. I don't even have little ones and I can't seem to take a decent picture of our dinners. By the time I sit it on the table and grab my camera my big ones have devoured it!
