Taco Egg Rolls

 We love Mexican Night!  The kids will eat taco meat by the forkful, and all of our favorite restaurants are always Mexican.

And, as I have mentioned before, Mini-Muffin#2 requires dip for his meals.  Any kind will do.

So, to combine our favorite meal with some dip, I rolled up our Tacos in Egg rolls instead, and Mini-Muffin#2 (as well as everyone else) dipped them in sour cream.
Awkward Kitchenette: Taco Egg Rolls

Yum.

It's kind of like a combination between a chimichanga and flautas, but the cheese is on the inside and it's not a corn tortilla, obviously. 

Taco Egg Rolls

Ingredients:
1 lb ground beef
1 package taco seasoning
8-10 egg roll wrappers
1 package Mexican shredded cheese








Step 1: Brown and drain ground beef.





Step 2: Season according to taco seasoning instructions.




Step 3: Turn off heat, and mix in shredded cheese with taco meat.





 Step 4: Fill egg roll wrappers.


Step 5: Brush egg rolls with olive oil.







Step 6: Bake at 375 for 15 minutes, flipping egg rolls at 8 minutes.

Step 7: Serve hot with sour cream!

    1. That's a good question - I have no idea about the freeze-ability of uncooked egg rolls. If anyone knows, please chime in!

    2. I would think so . Brown your meat mix in your cheese add your touch then wrap and freeze .. cook when ready !!

    3. I freeze my un-used egg roll and won ton wrappers all the time because too many come in a package for me to use at one time. They freeze very well like that.

  9. I love Mexican night, can I come next time???? And yes, I have made something similar and frozen them, both cooked and uncooked. I found freezing them on a cookie sheet lined with waxed paper works best, when they are frozen, I transfer them to a freezer bag.

  13. I'm trying this for the first time tonight. While I'm sure they'll end up being tasty, I'm seriously frustrated with the egg roll wrappers and my oven. We have a gas stove/oven and it's just refusing to make them crispy. Anyone else have this issue? I may just have to give up and fry them cause right now they are still powdery and soft, even after 30+ minutes in the oven.

  16. I tried to make these and it did note turn out well. I tried to fry these first as I see a lot of recipes on pinterest that say to bake but really need to be fried. It exploded into the oil. So i tried to bake them and they didn't bake, it stayed white but also exploded on the pan.

  19. For me, to get these types of things to brown in the oven I typically cook at a higher timep - like 425 (which is the temp a lot of frozen apps ask for). Also, make sure you brush them with oil

  22. I am making these tonight. These along with my homemade guacamole and salsa will be yummy~I'm going to double/triple the batch so I can freeze some. Great grab and go meal.
