Chicken Salad with Greek Yogurt

This is our favorite way to eat left-over chicken... although since I'm now "cooking," I should try harder or something.

Maybe.

But there is something ultimately satisfying about using up the left-overs in the fridge.  So, while I did give you some rough measurements on these, I really just dumped what was left in the container for the most part.



Greek Yogurt Chicken Salad

Ingredients:
6 cups chicken
1 cup light mayo
1 cup greek yogurt
1 tbsp black pepper
1 tsp salt
1/2 c relish
2 diced grn peppers


Step 1: Food process 6 cups of chicken.  This gives your chicken a very SPAMish texture.  If you like chunkier chunks, that are actually reminiscent of chicken, well, I guess you'd have to spend a lot of time cutting or shredding. And this is much smoother (easier).


Step 2: Dice green peppers (or what ever other chicken salad-y vegetable you have on hand.  Seems like celery would be normal, but this is what I had.)



Step 3: Mix all ingredients in a bowl.  With a spoon or a spatula, or even a fork if its closer.  Just mix it.



Step 4: There really is no more steps here.  Serve it on toast or bread or lettuce or a bagel.  Just don't forget to refrigerate!
