Caprese Grilled Cheese

Today I tackled this Caprese Grilled Cheese, by Kevin at Closet Cooking.  I cheated a little since I already knew it would be a hit, at least for stud-muffin.  We always love a good Caprese Salad (the fresher, the better!) and he loves anything with lots of cheese!

Somehow, these things always take me much longer than the time frame the recipe cites.  Possibly because of all my 'helpers'.  Here is one of the sleepy mini-muffins in our Baby Hawk Mei Tai.  The other two are playing 'boat' and coming in very 5 minutes to ask when dinner will be.

Or maybe just because I have no idea what I'm doing...


Caprese Grilled Cheese

Ingredients:

  
Step 1: My assembled pesto ingredients.  I use basil and spinach, garlic from a shaker, and skip the little nutty things. 















Step 2: Making Basil Spinach Pesto



Step 3: Grill Bread

Step 4: Add Pesto




Step 5: Add cheese

Step 6: Add tomato








Step 7: Enjoy!!



These were amazing.  Seriously, I don't know that I've ever enjoyed a sandwich so much!

I made the leftover cheese, tomatoes & pesto into regular old Caprese Salad, which we also enjoyed - and it will save better for lunch tomorrow this way.





The mini-muffins? Well, they ate hotdogs.

  1. Have fun with your blog! I made pesto today too and instead of the pine nuts (the little nutty things...ha!) I used walnuts and hemp seeds.
